Easy Chocolate Muffins with orange peel..

Baking makes me happy.

A great way to make kids happy is to decorate simple chocolate muffins with colorful details.. and let them help you, that is even more fun. Here is the recipe for my 10 minutes muffins..(makes 12 big or 24 medium).


1 cup flour (i always mix white flour with whole wheat flour , it is healthier especially for kids)

1 cup brown or white sugar (You can even use molasses instead)

1 egg

3/4 cup canola oil ( a friend of mine used walnut oil in her recipe, it tastes quite good)

1 cup milk (semi fat)

1 big tbsp Baking Powder

3 big tbsp unsweetened cocoa powder

1 tbsp hot water

peel of 1 orange

Preheat the oven: 180 degrees Celsius.

In a cup mix cocoa and hot water until it is smooth.

In a big bowl Mix flour, BP & sugar with a spoon. Add Oil, milk and egg. Mix well with the spoon (the dough needs to stay fluffy). Add the chocolate mixture and the orange peel. The dough must be too thick or too runny (add more flour or liquid to reach the right consistency).

Use paper cups as they do not stick (i didn’t like using metal or silicon muffin cups). Fill them halfway with the dough.

Bake 12-18 minutes (depending on your oven, mine is gaz and they burn quickly).

Leave to cool off on a rack (15 minutes).

Decorate with:

Powder sugar mixed with water or orange juice (use very little liquid). Add coloring if you like to be funky (but my experience is that it looks good but we end up with colored fingers and mouth!).

Use any kind of sprinkles, the more the better.

For “heavier topping/icing”: Mix few spoons of cream cheese with powder sugar, add coloring. Decorate using a star shaped icing tip. Looks very professional!
