My Grandmother Ingrid's apple cake

Smell the Cinnamon on that cake!


125 g flour (1 cup)

125 g butter (1/2 cup), softened

125 g sugar (1/2 cup)

3 eggs

½ tsp Vanilla essence

1 tbsp Baking powder

3-4 apples, peeled and cut in thin wedges


2 tbsp Brown sugar


Beat the eggs and the sugar until you get a creamy consistency. Then add the butter & vanilla essence beat again. Add the flour and baking powder; beat at a low speed for a minute. Pour the dough into a cake pan and decorate with the apples, layering them into a large circle then a smaller circle. Sprinkle the cinnamon on top and the brown sugar.

Place in a pre-heated oven (200 degrees) for 30 minutes (or until golden and the dough is firm when you prick it with a toothpick!).

Voila.. I usually serve this cake with a dollop of fresh liquid cream, or a scoop of vanilla ice-cream. The cake is delicious warm. Any apples can be used.

So easy, that even a child can make it!
