Cauliflower is not a very popular vegetable in our house! However, this recipe has revived it and gives it a wonderful, fresh spark. Easy to make, suits most meats or fish. Can be served with plain rice for vegetarians.
1 medium size cauliflower washed & cut into smaller parts
1 lemon; zest & juice
3-4 garlic; shopped
1 tbsp fresh ginger, grated or cut in very small pieces
1 can coconut milk
Pinch of salt
1 tbsp oil (canola)
Heat the oil in the pan. Add garlic & ginger. Fry 2 minutes. Add lemon peel and cauliflower. Fry 2 minutes. Then add the coconut milk. Lower the fire and let simmer for 10-15 minutes, or until the cauliflower is “al dente”. Add salt.
Serve hot with rice or with chicken on the side.
