1 ½ cup brown sugar
1 cup vegetable oil (I prefer canola)
Then add (don’t mix, just stir with a spoon so its stays fluffy!):
2 cups flour
1 spoon Baking Powder
1 spoon vanilla
1 ½ spoon cinnamon
¼ spoon nutmeg
3 cups grated carrots
1 cup walnuts chopped (or almonds)
3 spoons coconut flour
bake in a hot oven (200 degrees) 35-40 minutes. Cake is ready when inserted toothpick comes out dry.
- 50g butter
- 1 tsp citrus rind
- 1/4 cup cream cheese
- 1/2 teaspoon vanilla
- 1 cup icing sugar
- 1-2 Tablespoons of citrus juice
- optional; add few spoons of grated carrots
Mix all ingredients, pour over the cake when cool…Leftovers of icing can be poured over the slices!
Ps: you can replace the carrots by apples, equally delicious!
