Yesterday, my 7 year old and i worked in the kitchen together. He was home from school because of a flu, and was feeling restless, so i decided to let him work with me; my motto is busy child=happy child!
Browsing my 1000 blogs, we stumbled across this recipe; Green Pea pesto. It looked so delicisously green and fresh, especially served on toasted bread with a cherry tomato on top! How beautiful is that? And simple to make. This morning, I used the pesto in a sandwich with ham and lettuce, and sent my happy child back to school again!
- 1 (10-ounce) package frozen peas, defrosted
- 1 garlic clove
- 1/2 cup grated Parmesan
- 1 teaspoon salt, plus extra for seasoning
- 1/4 teaspoon freshly ground black pepper, plus extra for seasoning
- 1/3 cup olive oil
- cherry tomatos, cut in halves
For the pea pesto: Pulse together the peas, garlic, Parmesan, 1 teaspoon of salt and 1/4 teaspoon of pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl and set aside.
Toast some french bread, spread the pesto and decorate with a cherry tomato!
