4 tbsp butter
4 spring onions, chopped
350 g frozen or fresh peas
600ml (2 1/2 cup) vegetable stock
600ml (2 1/2 cup) milk
Salt, pepper (black)
Fresh mint (about a handful)
How to make
Heat butter and spring onions in a saucepan, then lower heat until softened.
Add the peas, the stock, and the mint and bring to the boil, then cover and simmer for 30 minutes.
Blend the soup (either in a blender or with a hand-blender)
Add the milk and mix a bit more.
Season and serve. Garnish with a spring of fresh mint and a swirl of cream.
