Summer time is here and so is the time for fruity & colorful desserts.
Verrine is a french word for food served in a individual glass. I just love the presentation of any dessert or first course in a glass. It looks sophisticated and very enticing.
Here is a recipe for a red fruit/apple crumble that i made few nights ago for some friends.
2-3 apples, cut in cubes
450 grams mixed red fruits ( i used frozen, which where surprisingly delicious)
4 tbsp sugar
juice of half a lemon
100 g cold butter
100g brown sugar
100 g flour
1 tsp cinnamon
Cook the apples with some sugar and a dash of Cinnamon & lemon juice, until soft. Then set aside in the fridge.
Cook the red berries on low fire, add the remaining sugar and lemon, until the consistency is soft and “moushy”. Set aside in the fridge.
For the crumble i usually cut cold butter in the flour and sugar-cinnamon mix, until it resembles dried crumble. Then I bake it in the oven (180 degrees) for 15 minutes on a metal pan or tray, until it is golden and crisp. the crumble mix can be kept in the freezer and used again (the portion is big).
The verrine is best made at the last minute (have everything ready from the morning), place a dollop red berry mix first in the glass, then apples, then the crumble.
This dessert is relatively light, but a dollop of fresh whipped cream or vanilla ice-cream would only add some loveliness to it!!
